Ingredients:
1 kg of octopus
1 onion
3 garlic cloves
1 bay leaf
1 lemon
Olive oil
Salt and pepper to taste
Fresh parsly (to garnish)
Instructions:
Clean the octopus and cut it into bite-sized pieces.
In a pot, place the octopus, onion, garlic, bay leaf and enough water to cover them.
Add the juice of half a lemon.
Season with salt and pepper to taste.
Bring to a boil and let it simmer for about 45 minutes, or until the octopus is cooked through.
Remove from the heat and let it cool.
Drain the octopus and discard the onion, garlic and bay leaf.
Place the octopus in a serving dish and drizzle with olive oil.
Squeeze the other half of the lemon over the octopus.
Garnish with fresh parsley.
Chill in the refrigerator for at least 1 hour before serving.
