Ingredients:
1/2 kg of potatoes
1 onion
2 garlic cloves
1/2 cup of olive oil
1 chorizo sausage
4 cups of water or chicken stock
1 bunch of kale or colard greens
Salt and pepper to taste
Instructions:
Peal and chop the potatoes.
Peal and chop the onion and garlic.
In a large pot, heat the olive oil and sauté the onion and garlic until soft.
Add the potatoes and sauté for a few minutes.
Add the water or chicken stock and bring to a boil.
Reduce the heat and let it simmer until the potatoes are tender.
In the meantime, clean the kale or collard greens and remove the stems.
Roll the leaves tightly and slice them into thin strips.
Add the kale or collard greens to the pot and let them cook for a few minutes.
Cut the chorizo sausage into small pieces and add them to the pot.
Season with salt and pepper to taste.
Serve hot.
