Ingredients:
1 cup of rice
2 cups of water
4 cups of milk
1 cup of sugar
1 cinamon stick
4 egg yolks
1 lemon peel
Cinnamon powder for garnish
Instructions:
In a saucepan, bring the rice and water to a boil.
Reduce the heat and let the rice simmer until the water is absorbed.
Add the milk, sugar, cinnamon stick and lemon peel to the pot.
Stir well and bring to a boil.
Reduce the heat and let it simmer until the rice is cooked and the pudding has thickened.
In a bowl, beat the egg yolks.
Remove the cinnamon stick and lemon peel from the pot.
Add a ladleful of the hot pudding to the egg yolks and whisk.
Slowly pour the egg yolk mixture back into the pot, stirring constantly.
Let the pudding cook for another 2-3 minutes, stirring constantly.
Remove from the heat and let it cool.
Serve cold, sprinkled with cinnamon powder.
