Ingredients:
500g of salt cod (bacalhau)
1kg of potatoes
6 eggs
2 onions
3 garlic cloves
1/2 cup of olive oil
1/2 cup of chopped parsley
Salt and pepper to taste
Instructions:
Soak the salt cod in water for 24 hours, changing the water 3-4 times.
Boil the cod for 5-10 minutes until it flakes easily, then remove the skin and bones and flake the fish into small pieces.
Peel and thinly slice the potatoes, then fry them in olive oil until golden brown.
Thinly slice the onions and garlic, then sauté them in olive oil until soft.
Beat the eggs in a bowl and mix in the flaked cod, fried potatoes, sautéd onions and garlic, chopped parsley, salt and pepper.
Add the egg mixture to the pan and cook over low heat, stirring constantly until the eggs are cooked and the mixture is creamy.
Serve hot, garnished with more chopped parsley.
